Several parents asked for the casserole recipes I made for our 4th & 5th Grade Thanksgiving Luncheons...... I thought the easiest way to share them was to post them on my Blog.....ENJOY.....
Broccoli Casserole
2 pgs chopped broccoli
2 eggs
1/2 cup mayonaise
1 can undiluted cream of mushroom soup
3 tbs chopped onion
3/4 lb shredded cheddar cheese
salt & pepper to taste
1 cup bread crumbs
1/2 stick butter
Boil broccoli 5 minutes and drain very well. Beat eggs, stir in mayo, soup, onions, cheese, salt and pepper. Fold in cooked broccoli. Put in casserole dish, shake bread crumbs on top. Drizzle melted butter over the top of crumbs. Bake at 375 degrees for 40 minutes.
Corn Casserole
1 can kernel corn
1 can creamed corn
1 stick butter (softened)
1 cup sour cream
1 box jiffy corn muffin mix
Put all ingredients in a bowl and mix together. Bake at 350 degrees for 45 minutes.
